Hi everyone and welcome to my eating right website. Ever since I was a kid growing up in Nicaragua I was curious about nutrition. I equated a healthy diet with longevity, because I watched peasants growing into old age by just eating rice and beans with tortilla.
I considered this diet the secret for a long life. At the library, I find out what this staple food was all about.
Rice is a cereal grain consumed by a large part of the world´s population. I discovered that Asia, not Latin America, was the region with its highest worldwide production and consumption. Beans, on the other hand and I was pleasantly surprised, were not known to the Europeans until they discovered the New World. Tortilla or unleavened flatbread, was made by the indigenous people of Mesoamerica before European contact

A LITTLE STORY ABOUT MY STUDENT DAYS IN EUROPE
After I graduated from high school in Nicaragua, left for Britain to learn English. I liked it so much living there that I decided to go to university in Wales.
While living in the UK, I came acquainted with the traditional English breakfast which consists of bacon, fried, poached or scramble eggs, fried or grilled tomatoes, fried mushroom, buttered toasts and sausages. Black pudding, baked beans and bubble and squeak are also often included. This is called ¨full English breakfast¨ or ¨full English¨( or¨ Full Monty¨). Don´t ask me if this is nutritious or not. Suffice to say I didn´t have it every day.
During summer holidays I would go to France, to learn French. It was my introduction to French cuisine. A French saying was ¨you are what you eat¨ and it stuck in my mind. I lived in total about 6 years in Britain during which time I also visited many countries in the European continent and I always noticed the different eating habits of Germans, Italians, Scandinavians, Belgians, Swiss and Greeks
DIET HAS CHANGED
Gone are the days of rice, beans and tortilla as the ideal diet. Now you have the flavor of the month: vegetarian, semi-vegetarian, weigh-control, crash, detox, belief-based, medical –based, and other diets (alkaline, blood-type, Person therapy, The Graham and et al.)
What are we going to do with so many choices?. What is the best diet for me?
THE REASONS FOR A HEALTHY LIFE STYLE IS TO LIVE LONGER
Longevity with quality of living or happiness is what we all want.
Eating healthy diet is the most important part of healthy lifestyle, like eat low fat foods, drinks lots of water, and choose healthy cooking oil, especially cholesterol-free (Canola).
I would consider USDA Center For Nutrition Policy and Promotion (MyPlate), a good starting point. In other words food is divided into 4 groups of approximately 30 percent grains, 40 percent vegetables, 10 percent fruits and 20 percent protein, accompanied by a smaller circle representing dairy, such as a glass of milk or a yogurt cup.
